"A lot of my chef friends say that the plant-based kitchen is not as tasty and interesting as the meat-based kitchen. I think that is really wrong. If you look at the Indian kitchen where they use a lot of spices, it’s basically impossible to taste the difference if you add meat to a dish. The spices are the important part. So when we know that meat is bad for the environment, why not just cut it out and add lentils instead?"
